The Ultimate Pancake Recipe

Who doesn't LOVE pancakes? This recipe is super delicious, fluffy and healthy! In only 5 minutes you could whip this up on a Sunday morning for brunch with friends (trust me - they will love u for it!)


Makes: ~9


Ingredients:

  • 1/2 of oat flour (make by whizzing oats in Nutri bullet of blender)

  • 3/4 cup wholemeal plain flour

  • 2 tsp baking powder

  • 1.5 tbsp brown sugar

  • pinch of salt

  • 1/4 tsp cinnamon

  • 3/4 cup almond milk

  • 1 egg

  • 1 tsp vanilla extract

  • 1/4 cup greek yoghurt

  • 1/2 cup frozen blueberries


Method:

  1. In a medium sized bowl, whisk flours, baking powder, sugar, salt and cinnamon until combined.

  2. In a smaller bowler, whisk the egg, milk and vanilla until combined.

  3. Pour wet ingredients into the dry ingredients and whisk until blended.

  4. Gently fold in yoghurt and berries.

  5. Heat a large frying pan over medium heat and grease with butter.

  6. Using a 1/4 of a cup, scoop pancake mixture onto the pan and flip when bubbles form.

  7. When pancakes reach desired texture, remove from heat and garnish with fresh berries, yoghurt and maple syrup.

  8. Enjoy!
