Who doesn't LOVE pancakes? This recipe is super delicious, fluffy and healthy! In only 5 minutes you could whip this up on a Sunday morning for brunch with friends (trust me - they will love u for it!)
Makes: ~9
Ingredients:
1/2 of oat flour (make by whizzing oats in Nutri bullet of blender)
3/4 cup wholemeal plain flour
2 tsp baking powder
1.5 tbsp brown sugar
pinch of salt
1/4 tsp cinnamon
3/4 cup almond milk
1 egg
1 tsp vanilla extract
1/4 cup greek yoghurt
1/2 cup frozen blueberries
Method:
In a medium sized bowl, whisk flours, baking powder, sugar, salt and cinnamon until combined.
In a smaller bowler, whisk the egg, milk and vanilla until combined.
Pour wet ingredients into the dry ingredients and whisk until blended.
Gently fold in yoghurt and berries.
Heat a large frying pan over medium heat and grease with butter.
Using a 1/4 of a cup, scoop pancake mixture onto the pan and flip when bubbles form.
When pancakes reach desired texture, remove from heat and garnish with fresh berries, yoghurt and maple syrup.
